Fried Plantains

Fried plantains are one of my favorite foods to snack on!  The key is to buy a couple of plantains and let them sit until they turn black and look like they’re basically inedible.  At that point, check them to see how soft/firm they are.  You’ll want them to be a sort of medium firmness–not hard but not too mushy.  They are addicting!

Fried Plantains

Ingredients:

  • 1-2 plantains (1 feeds about 2 people)
  • canola oil (try other oils for a slightly different taste)

Directions:

Heat oil in pan over medium heat.  Peel plantain by cutting in half, slicing off other end, and making a slit down the length of the skin.  Peel skin off of fruit.  Slice plantain into coins.  Once oil is heated, place sliced plantain in hot oil to fry.  Flip and fry other side once bottom is golden-dark brown, depending on your preference.  Once fried on both sides, remove to paper towel-lined plate to cool slightly.  Enjoy!

L’BRI Skin Care Products Giveaway — CLOSED

Happy Mommy Box Review # 1

IMG_5525 crI really like the idea behind the Happy Mommy Box.  It is like a care package for moms–meant to celebrate our role and give us a little help, too.  Being a mom can get awfully lonely and discouraging at times.  It’s nice to know someone’s thinking of you–even if you have to pay them to think about you.  Does that make any sense whatsoever?

IMG_5624 crIt comes with this booklet which includes a letter from the Happy Mommy Box team, information about their brand partners, and a short interview with a featured Happy Mom.  It’s meant to give you a little pick-me-up and introduce you to another mom who is willing to share some wisdom.

  • Lilapops All Natural Cough Drop Lollipops “Grapeberry” — retail $8.99.  I look forward to trying these out the next time the kids get a cold.
  • Bitty Bow Shop Elastic Hair Ties — retail $6.50.  The designs are really cute and nice quality.
  • Blesserheart Art 2015 Art Calendar — retail $10.  I love the affirmations on this calendar and I know just the friend I want to give it to.  She has a desk job and chronic health problems, and I think these messages would do her a world of good.
  • Lavender and Pearls Boutique Pearl Earrings — retail $4.99
  • Fit Chic Headband — retail $10.  I’m not feeling this.  Maybe it’s the fabric.  I see that it’s meant to be a workout headband, though.  That’s probably why the material is so different.
  • SoCal Gems Arrow Necklace — retail $9.99.  This is a really cute little necklace, I only wish it came in silver.  I’ll be passing it along.
  • Alice & Ivory Print — retail $14 (shipped).  I really like this print, but will have to find a frame for it.  A good reminder for all moms!

Final Thoughts: Cost vs. retail value is definitely a winner for this box.  While not every item appealed to me personally, I have friends who would love all the other stuff.  I feel like a lot of thought and care went into choosing the items in this box.  I also think you get an amazing amount of stuff for what you pay.  Two thumbs up!
